Wheat Berry Salad

Grain: 1 oz.

Fruit: 1/4 cup

Ingredients

6 cups Wheat Berries

5 Qts 1 cup Water

2 tsp Salt

1 cup Orange juice, raw

1 cup Cranberries, whole, sliced, dried

3 ea Large Pears

9 Tbsp Cider vinegar

9 Tbsp Olive oil

Method

  1. To prepare wheatberries, rinse well under cool running water. Place in a large heavy bottom saucepan with the water and salt. Bring to a boil over high heat, then reduce heat, cover, and simmer gently for 50 to 60 minutes. Drain and cool.

  2. For the salad: Combine orange juice and cranberries in small bowl. Let stand for 15 minutes. Combine the cooked wheat berries and diced pears in a large bowl. Stir gently. Drain the cranberries and stir into the wheat berries. Whisk the reserved orange juice, vinegar and oil in a small bowl until combined. Season with salt and pepper. Pour over the salad and serve at room temperature.
