Pineapple Salsa
Ingredients
3 1/2 c Pineapple, diced, drained
3 c Mandarin orange sections, drained
7 Tbsp Cilantro, fresh, chopped finely
2/3 c Lime juice, fresh
3 Tbsp Jalapeno, fresh, seeded, diced fine
1 c Grape tomatoes, fresh, cut in half
Method
Using gloves, crush the diced pineapple and drain well
Also using gloves, crush the mandarin oranges, drain well
In a large mixing bowl, min together the oranges, pineapple and cilantro
Mix in lime juice, salt jalapenos and tomatoes
Store chilled at 40F or below until serving
Best made 1 day in advance for flavor development
