Pineapple Salsa

Ingredients

3 1/2 c Pineapple, diced, drained

3 c Mandarin orange sections, drained

7 Tbsp Cilantro, fresh, chopped finely

2/3 c Lime juice, fresh

3 Tbsp Jalapeno, fresh, seeded, diced fine

1 c Grape tomatoes, fresh, cut in half

Method

  1. Using gloves, crush the diced pineapple and drain well

  2. Also using gloves, crush the mandarin oranges, drain well

  3. In a large mixing bowl, min together the oranges, pineapple and cilantro

  4. Mix in lime juice, salt jalapenos and tomatoes

  5. Store chilled at 40F or below until serving

  6. Best made 1 day in advance for flavor development
