Penne Pasta with Vegetarian Italian Sausage

Ingredients

100 ea Morningstar Farms® Italian Sausage Style Veggie Crumbles

4 1/2 c Cheese, parmesan, grated

6 qt Marinara Sauce

6 1/2 qt Penne pasta, whole grain

1 G Cheese, mozzerella, shredded

2 qt + 3 c Cheese, cheddar, mild, shredded

Method

  1. Heat up the Marinara sauce to 165°F

  2. Stir in the Morningstar Farms® Italian Sausage Style Crumbles into themarinara sauce

  3. Cook the penne pasta in boiling water until it is cooked through with a light bite

  4. Drain the pasta well and mix with the parmesan cheese. This adds a salty flavor.

  5. Add the pasta mix into the hot marinara sauce.

  6. Spray four 4” hotel pans with nonstick spray and divide the pasta mix evenly between the pans

  7. Bake the pasta at 325°F for 20 minutes, should reach an internal temperature of 165°F

  8. Remove from the oven and sprinkle 1 lb grated parmesan, 1 lb shredded mozzarella and 11 wt oz of shredded cheddar on top of each hotel pan of pasta, repeat for the other 3 pans

  9. Hold hot for service at 140°F or higher

  10. Serve with a #6 scoop (3/4 cup)
