Coconut Curry Beyond Bratwurst

Ingredients

1/2 oz Oil, Vegalene Spray

3/8 oz Curry Powder

1/8 # Yellow Onion, Sliced

1/4 oz Garlic, raw, minced

1/2 Tbsp Ginger, raw, minced

1/8 oz Ground Cumin Seed

1/8 oz Chili Powder

1/4 tsp Coriander

1/4 tsp Crushed Red Pepper

1/4 C Vegetable Stock

1/4 oz Tomato Paste

3.3 fl oz Coconut Milk

1/2 oz Agave Syrup

1 ea Beyond Sausage® Bratwurst

Method

  1. Heat 2 Tbsp oil in pan on medium heat

  2. Add the bratwurst to the pan, sear on all sides.

  3. Remove bratwurst, set aside to cool. Once cooled, slice into ¼” slices on a bias.

  4. In the same pan, heat 2 Tbsp oil. Add onion, garlic, and ginger to pan. Season with salt and pepper. Sauté until translucent.

  5. Add tomato paste and all spices, stir until evenly distributed.

  6. Add coconut milk and vegetable stock to the pan and stir until combined.

  7. Bring mixture to a boil, then reduce heat to simmer. Simmer for 8-10 minutes until thickened.

  8. Add agave and stir until combined.

  9. Taste and season as needed.

  10. Add sliced bratwurst to pan, stir until fully coated and heated through.

  11. Remove from heat.

  12. To serve: Spoon 1 cup coconut curry brats over rice in a bowl; garnish with cilantro.
