Avocado and Egg Toast with Mole Sauce

Ingredients

1 ea. Bread, whole wheat, commonly prepped, slice of

½ ea. Avocados, raw, all common varieties

1 ½ tsp. Lime juice, raw

1 dash Salt, table

1 dash Black pepper

1 ea. Egg, whole, raw, fresh, large

1 Tbsp. Mole Sauce (see recipe index)

1 tsp. Cilantro, fresh, leaf, roughly chopped

Method

  1. Toast whole wheat bread.

  2. Mash avocado, lime juice, salt, pepper, and cilantro. Spread on toast.

  3. Cook egg over easy and serve on top of avocado toast.

  4. Serve with mole sauce and cilantro.
