Mole Sauce

Yield: 24, 1 Tablespoon Servings

Ingredients

3 Tbsp. Safflower oil, salad or cooking

1 ½ ea. Onions, raw, small

2/4 tsp. Garlic, raw

1 ea. Bay leaf

¾ tsp. Paprika

½ tsp. Cinnamon, ground

1/8 tsp. Cloves, ground

3 ea. Sun-dried tomatoes

6 Tbsp. Raisins, seedless, packed

3 oz. Dark chocolate

3 Tbsp. Tahini paste

6 Tbsp. Water, municipal

Method

  1. Heat oil in pan and sweat onion, add garlic, and allow to soften. Add spices, tomatoes, raisins, and simmer until soft, about 3 minutes. Remove from heat and add chocolate and tahini paste. Stir to melt chocolate.

  2. Add water and blend with immersion bender until smooth. Serve over eggs on avocado toast.
